1 1/2 cups semolina (rava / sooji)
1/4 cup finely chopped and boiled mixed vegetables
1/2 cup curd (dahi)
1 1/2 tsp ginger-green chilli paste
1 tbsp oil
salt to taste
1 1/2 tsp fruit salt
1 tbsp oil
1 tsp mustard seeds ( rai / sarson)
1 tsp sesame seeds (til)
a pinch of asafoetida (hing)

What are Dhoklas?
- What are Dhoklas? Dhokla is a soft and fluffy steamed snack from the Gujarati repertoire. This all-time favourite is enjoyed as a starter, as a tea-time snack, or even for breakfast. Basically, something you can have any time you are hungry!
There are innumerabledhoklarecipes falling under different types, so you can make this snack multiple times a week and still not get bored. Somedhoklabatters like the healthy Moong Dal Dhokla require grinding and fermentation, while others like the Rava Dhokla are quick-fix options that you can simply mix and steam. So, depending on the availability of time and ingredients, you can pick adhoklarecipe.
The best part is that you can always reinforce yourdhoklabatter with delicious and tasty veggies and greens, like grated carrots, crushed green peas or fenugreek leaves. This makes thedhoklacolourful, tasty and healthy too. Once you know the different types ofdhoklabatters, you can go it on your own, by varying the added veggies, tempering, and so on, according to preferences and availability.
For The Rava Vegetable Dhokla Batter
- In a microwave safe bowl, take the carrots, French beans and some green peas.
- Pour enough water to boil them.
- Cover with a lid and microwave on HIGH for 7 minutes.
- Drain the vegetables and keep aside.
- For the batter of quickRava Vegetable Dhoklas, in a deep bowl, put the semolina.
- To this, add the boiled mixed vegetable viz. carrots, French beans and green peas. Also, you can put leafy vegetables like spinach, methi or coriander in the vegetable dhokla recipe.
- Add the curd. Alternatively, you can add buttermilk. Use slightly sour curd for flavor similar to the Gujarati khatta dhokla.
- Also, add the ginger-green chilli paste.
- Add the oil.
- Add salt and 1½ cups of water.
- Mix well to make a smooth lump-free batter.
- Cover and keep aside to soak for atleast 30 minutes. TheRava Vegetable Dhoklasis an instant recipe as it does not require time for fermenting.
For Steaming The Rava Vegetable Dhokla
- For steaming The Rava Vegetable Dhokla, add enough water in steamer and heat it over medium flame.
- Grease a 175 mm. (7”) diameter thali with oil.
- Just before steaming theRava Vegetable Dhoklas, add the fruit salt. We have used a neutral flavored fruit salt here.
- Add 2 tsp of water over the batter. This helps in the activation of fruit salt.
- When the bubbles form, mix gently. You do not want the air bubbles to escape.
- Divide theRava Vegetable Dhoklasbatter into 2 equal portions.
- Pour one portion of the batter immediately into a 175 mm. (7”) greased thali. Don’t keep the dhokla batter idle for a long time after adding fruit salt or else you will get hard dhoklas.
- Shake the thali clockwise to spread it evenly to make an even layer.
- Steam in a steamer for 10 minutes or till theRava Vegetable Dhoklasare cooked. Always steam the dhoklas over medium flame to get spongy texture.
- Insert knife or toothpick in the center and check if it comes out clean. If it does, then it our rava dhokla are ready. If not, then steam it for 2-3 minutes more.
- Repeat steps 7 to 10 and make 1 more thali ofRava Vegetable Dhokla, Sooji Vegetable Dhoklas. Keep aside.
For The Tempering Of Rava Dhokla
- For the tempering ofRava Vegetable Dhoklas, heat the oil in a small pan.
- Add the mustard seeds.
- Add the sesame seeds. These seeds provide a nice aroma and flavor to the dhokla.
- Add the asafoetida and sauté on a medium flame for a few seconds.
- Pour the tempering over the preparedRava Vegetable Dhoklaswith the help of a spoon. The tempering is totally optional.
- Cut into equal sized pieces. Once theRava Vegetable Dhoklasis cooked, allow it to cool before you cut into pieces.
- Serve the Rava Vegetable Dhoklashot with green chutney.
